For all Pinot Noirs we use spontaneous fermentation in mainly wooden fermentation vats. This vinification orientates strongly on the Burgundy style using open mash fermentation and new casks (12-14 months maturation in barrique).
White wines are vinified in stainless steel tanks as well as in wooden barrels, paying special attention to aroma typicity and a long maturation on yeast.
